Moved from Port Arthur, TX to Henderson, LA. Henderson is just east of Lafayette, LA. Staying at the Cajun Palm RV Resort. This place is really nice... Large pools with two "refreshment" bars, hot tub and grill (all closed due to the cold...). Pretty nice for being in the middle of nowhere...
This is the first time we've camped in Louisiana, so of course, we had to add the state to our map!!
And we outfitted the coach to be our "Reindeer"!!!
Finally, we needed a Christmas Tree!!! (Thanks Debi!!!)

Visited Avery Island, LA where all the Tabasco products are made. This was sooo interesting! Here are some pictures of the factory tour...
The peppers are harvested based on having the exact color required (they have sticks with the color needed for the pepper pickers). Then the peppers are smashed into a "mash", put into white oak barrels and sealed with salt to keep out oxygen and allow fermentation gases to escape. These barrels are stored and allowed to ferment for 3 years!!!
After 3 years the mash is removed from the barrel, cleaned, drained and mixed with high quality distilled vinegar for about 28 days in 1800 gal vats. The mixture is agitated on a regular basis during the 28 days...
The sauce is then sent to the production line to be bottled and shipped all over the world...
The day we were there, the production line was preparing bottles to be shipped to Japan...
The factory store has all kinds of goodies to take home...
The McIlhenny family (creators and owners of Tabasco) have also a 170 acre garden called "The Jungle Garden" next to the factory. This can be toured, which we did... it is very nice!!
We spent New Years in Henderson and survived a horrible storm on Jan 2...
Now off to Alabama!
